Thai dishes
This morning Russ phoned me when he was in supermarket (there) he asked what I wanted to cook this weekend(dont know why he asked me as I live so far).I was so sleepy to think about thing.I said I would love to make Padtai ,very easy Thai dish that he can cook and I think it should be very easy to find ingredients there.(and it is also in my plan,if Russ can cook thai dish my life will be very easy ,,, you,girl know what i mean )
then i thought i should put this on TF as it will be useful for ppl who live in other country and want to cook easy thai dish (and i made it more easier by suggested something that you can find or can not find there)
I wanted to share my Russ padtai to your all who live in other country and miss your gf and her padtai… you can do now...
I'm not going to make you drive around your home town procuring all the required ingredients to make a proper Pad Thai only to feed just you. We will do like they do on the streets of Bangkok.
I also put some suggestions if you cannot find things we have here.

Ingredients:
# 2 lbs the small fresh rice noodle.(or Thai rice noodles, also called Rice Sticks)
# 20 ounces fresh shrimp peeled and deveined.(if you don’t like it you don’t need it we can use eggs instead)
# 1 pack of tub-style firm tofu.(yellow tofu, my bf can’t have tofu so we did not put them in)
# ½ cup of cooking oil.(soya oil, rum oil, sesame oil)
# 2-3 cloves minced garlic.
# 1/3 cup of tamarind sauce.(in case you cannot find it tomatoes sauce is ok)
# 1/3 cup of water.(I recommend mind soup)
# 3 tablespoons of white vinegar.(not really need it I recommend putting some more tamarind sauce)
# 4 tablespoons of soy or fish sauce.(better fish sauce or chicken stock or salt)
# 6 tablespoons of brown sugar or, white sugar. (Russ put honey in his Thai style fried-rice last time and it worked!!)
# ½ teaspoon of crushed red pepper.(or chill powder or Paprika)
# ¼ cup of cilantro leaves for topping. (if you don’t have it you can use lemon grass)
# 1/3 of peanuts (roasted and crush as a side-dish).
# 3 cups of bean sprouts (1 cup for cooking and 2 cups for side-dish). (not easy to find maybe you can grow them using green been seed and wet tissue paper... i saw them in asian market in CA ... maybe you can find it in asian market near you)
# 2 limes (cut into ¼ slice as side-dish).
How to make padtai sauce
There are four ingredients in the Pad Thai sauce, Tamarind Sauce, Fish Sauce ,Palm Sugar), and Paprika or Thai chili powder Melt all these together in a small pot over a very low flame. Taste and adjust the flavor balance until it suits you. Then add the chili powder, begin with a teaspoon or two, depending on your taste, and keep adding those ingredients until it tastes the way you like it. Turn off the heat and let the sauce rest while you get to the other ingredients.
I like my sauce to lead with a sour flavor, follow by a mild saltiness, then just a gentle sweetness (coz i am so sweet haha)
Noodles
Get them fresh if you can find them. If not, you can use dry noodle (like Russ found them in a supermarket) and soak in warm water until soften. Don't soak until the noodle is soft enough to eat (don’t forget you will fry them)do it until it's pliable, then drain well.
How to cook :
1. Pre-heat the wok with a splash of the cooking oil to medium- heat. Break 2 eggs into the wok stirring until soft cooked; take out of wok and put aside.
2. Put 1/3 of minced garlic into wok fry until golden, add shrimp; cook and stir 2 minutes; add soy sauce and sugar stir quickly and remove from wok; put into plate.
3. Pour all the cooking oil in the wok, throw in the tofu and stir quickly. add tamarind juice, vinegar, water and sugar, stir together and add soy sauce (optional ) add ½ teaspoon of the toasted red peppers).
4. Add in noodles stirring until the noodles and sauce mix together well. Move the noodle to one side of the wok, and break 2 eggs into the mix and stirring until they are mixed well with the noodles and sauce,(another option, if you choose to do so, is to add 1 cup of bean sprouts and stir together). Add pre cooked shrimp that you have laid aside, add green onions stir, and then add cooked eggs last.
You make it at Home to serve, place noodles on serving plates, and garnish with cilantro leaves, add crushed peanuts, bean spout and ¼ of cut lime as a side dish. This is enough for up to four to five people.
